A quick and flavorful spicy noodle stir fry with vegetables and your choice of protein.
Ingredients

- 8 oz noodles (ramen, udon, or lo mein)
- 1 tbsp cooking oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1/2 cup mixed vegetables (broccoli, carrots, bell peppers)
- 4 oz protein (chicken, tofu, shrimp), sliced
- 2 tbsp soy sauce
- 1 tbsp chili garlic sauce
- 1 tsp sesame oil
- Optional: green onions, sesame seeds for garnish
Instructions
- Cook noodles according to package directions. Drain and set aside.
- Heat oil in a wok or large skillet over medium-high heat.
- Add garlic and ginger, stir-fry for 30 seconds until fragrant.
- Add protein and cook until browned or cooked through.
- Add vegetables and stir-fry for 2-3 minutes until tender-crisp.
- Add cooked noodles, soy sauce, and chili garlic sauce. Toss to combine.
- Stir in sesame oil.
- Serve immediately, garnished with green onions and sesame seeds if desired.
Notes
- Adjust chili garlic sauce for desired spice level.
- Feel free to add other vegetables like mushrooms or snap peas.
- For a vegetarian option, use tofu or tempeh.
