A delightful twist on the classic Italian dessert, this Matcha Tiramisu features layers of matcha-soaked ladyfingers and creamy mascarpone filling, dusted with vibrant matcha powder.

- 250g mascarpone cheese
- 3 large eggs, separated
- 100g granulated sugar
- 200ml strong brewed matcha tea, cooled
- 24 ladyfingers
- 1 tablespoon matcha powder, for dusting
- 1 teaspoon vanilla extract
Instructions
- In a bowl, whisk together the egg yolks and half of the sugar until pale and creamy.
- Beat in the mascarpone cheese and vanilla extract until smooth.
- In a separate clean bowl, whisk the egg whites until stiff peaks form. Gradually add the remaining sugar and continue whisking until glossy.
- Gently fold the whipped egg whites into the mascarpone mixture.
- Dip the ladyfingers briefly into the cooled matcha tea.
- Arrange a layer of matcha-soaked ladyfingers in the bottom of a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat with another layer of ladyfingers and the remaining mascarpone mixture.
- Cover and refrigerate for at least 4 hours, or preferably overnight.
- Before serving, dust generously with matcha powder.
