A delightful twist on the classic Italian dessert, this Matcha Tiramisu features layers of matcha-soaked ladyfingers and creamy mascarpone filling, dusted with vibrant matcha powder.


Ingredients

  • 250g mascarpone cheese
  • 3 large eggs, separated
  • 100g granulated sugar
  • 200ml strong brewed matcha tea, cooled
  • 24 ladyfingers
  • 1 tablespoon matcha powder, for dusting
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, whisk together the egg yolks and half of the sugar until pale and creamy.
  2. Beat in the mascarpone cheese and vanilla extract until smooth.
  3. In a separate clean bowl, whisk the egg whites until stiff peaks form. Gradually add the remaining sugar and continue whisking until glossy.
  4. Gently fold the whipped egg whites into the mascarpone mixture.
  5. Dip the ladyfingers briefly into the cooled matcha tea.
  6. Arrange a layer of matcha-soaked ladyfingers in the bottom of a serving dish.
  7. Spread half of the mascarpone mixture over the ladyfingers.
  8. Repeat with another layer of ladyfingers and the remaining mascarpone mixture.
  9. Cover and refrigerate for at least 4 hours, or preferably overnight.
  10. Before serving, dust generously with matcha powder.
