- 1 packet taco seasoning
- 1/2 cup diced onions
- 1/4 cup chopped cilantro
- 12 small corn tortillas
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn kernels
- 1/4 cup sour cream
- 1/4 cup salsa
- 1/4 cup shredded cheese
- 1 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
- Stir in taco seasoning, diced onions, and cook for 5 minutes until onions are softened.
- Add black beans and corn kernels to the skillet. Cook for another 3-5 minutes until heated through.
- Warm the corn tortillas according to package directions.
- Fill each tortilla with the beef mixture.
- Top with shredded cheese, sour cream, salsa, and chopped cilantro.
Notes
- For a spicier taco, add a pinch of chili flakes to the beef mixture.
- Vegetarian option: Substitute ground beef with crumbled firm tofu or mushrooms.
