Ingredients

  • 12 small corn tortillas

  • 1/4 cup salsa
  • 1/4 cup shredded cheese
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
  2. Stir in taco seasoning, diced onions, and cook for 5 minutes until onions are softened.
  3. Add black beans and corn kernels to the skillet. Cook for another 3-5 minutes until heated through.
  4. Warm the corn tortillas according to package directions.
  5. Fill each tortilla with the beef mixture.
