Description

A refreshing salad featuring pan-fried crispy halloumi cheese, mixed greens, and a light vinaigrette.


Ingredients

  • 250g halloumi cheese, sliced
  • 2 tbsp olive oil
  • 5 oz mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, sliced
  • 2 tbsp red onion, thinly sliced
  • 2 tbsp lemon juice
  • 1 tbsp extra virgin olive oil
  • 1 tsp Dijon mustard
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Pat the halloumi slices dry with paper towels.
  2. Heat 2 tbsp olive oil in a non-stick skillet over medium-high heat.
  3. Fry halloumi slices for 2-3 minutes per side, until golden brown and crispy. Remove from skillet and set aside.
  4. In a small bowl, whisk together lemon juice, extra virgin olive oil, Dijon mustard, salt, and pepper to make the dressing.
  5. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
  6. Add the crispy halloumi to the salad.
  7. Drizzle the dressing over the salad and toss gently.
  8. Serve immediately.
