Description
A refreshing salad featuring pan-fried crispy halloumi cheese, mixed greens, and a light vinaigrette.
Ingredients

- 250g halloumi cheese, sliced
- 2 tbsp olive oil
- 5 oz mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, sliced
- 2 tbsp red onion, thinly sliced
- 2 tbsp lemon juice
- 1 tbsp extra virgin olive oil
- 1 tsp Dijon mustard
- Salt to taste
- Black pepper to taste
Instructions
- Pat the halloumi slices dry with paper towels.
- Heat 2 tbsp olive oil in a non-stick skillet over medium-high heat.
- Fry halloumi slices for 2-3 minutes per side, until golden brown and crispy. Remove from skillet and set aside.
- In a small bowl, whisk together lemon juice, extra virgin olive oil, Dijon mustard, salt, and pepper to make the dressing.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
- Add the crispy halloumi to the salad.
- Drizzle the dressing over the salad and toss gently.
- Serve immediately.
Notes
- For extra flavor, add toasted nuts or seeds.
- You can add grilled chicken or shrimp for a more substantial meal.
