- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup cooked white or brown rice
- 1 (15 ounce) can black beans, rinsed and drained
- 1/2 cup corn (fresh, frozen, or canned)
- 1/2 cup salsa (your favorite kind)
- 1/4 cup chopped cilantro
- Optional toppings: shredded cheese, sour cream, guacamole, sliced jalapeños, lime wedges
Instructions
- Cook ground beef in a skillet over medium-high heat. Break it apart with a spoon.
- Drain off any excess fat.
- Stir in chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for 1-2 minutes until fragrant.
- Assemble your bowls: Start with a base of cooked rice.
- Top with seasoned ground beef, black beans, and corn.
- Add salsa and chopped cilantro.
- Add any of your favorite optional toppings.
- Serve immediately.
Notes
- For a spicier bowl, add a pinch of cayenne pepper to the beef seasoning.
- You can prepare the beef and rice ahead of time for quick assembly.
- Feel free to substitute chicken or turkey for the ground beef.
- Other bean options like pinto beans or kidney beans work well.
