- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, combine graham cracker crumbs and 1/4 cup sugar. Stir in melted butter until well combined. Press mixture evenly into the bottom of the prepared pan.
- Bake the crust for 8-10 minutes, until lightly golden. Let cool slightly.
- In a large bowl, beat cream cheese and 3/4 cup sugar until smooth.
- Beat in eggs one at a time, then stir in vanilla extract.
- Pour the cream cheese mixture over the cooled crust.
- Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
- Let cool completely in the pan on a wire rack.
- Chill in the refrigerator for at least 2 hours before cutting into bars.
Notes
- For a richer crust, add 1/4 teaspoon cinnamon to the graham cracker mixture.
- You can add toppings like fruit or chocolate chips after pouring the cream cheese filling.
- Ensure cream cheese is fully softened for a smooth filling.
