- 2 large eggs
- 1/4 cup milk
- 1 tablespoon butter
- 1/2 cup shredded cheese (cheddar or Monterey Jack)
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- Salt and pepper to taste
- Optional toppings: salsa, avocado, cilantro, hot sauce
Instructions
- Warm tortillas according to package directions.
- Whisk eggs and milk in a bowl. Season with salt and pepper.
- Melt butter in a non-stick skillet over medium heat.
- Add onion and bell pepper to the skillet. Cook until softened, about 3-5 minutes.
- Pour egg mixture into the skillet. Cook, stirring occasionally, until eggs are set.
- Stir in shredded cheese until melted.
- Spoon egg mixture into warm tortillas.
- Add your favorite toppings.
- Serve immediately.
Notes
- For a spicier taco, add diced jalapeños with the onions and peppers.
